Everyday Pancakes! (Paleo/Gluten Free! Banana, Pumpkin, Gingerbread and Apple Pie versions)

These yummy delights don’t have to be saved for the weekend.  Feel good about enjoying these protein-packed breakfast winners any day of the week!  They’re a perfect post workout meal, and can be changed up in a variety of ways!

I came across the basic “recipe” (2 eggs + 1 banana) on a shared post a while ago.  I wish I could give credit to whoever came up with it, because I just love them!

A bit of trial and error has taught me to really let the underside of the pancakes cook well before trying to flip them, or they will fall apart, especially the pumpkin version.

I’ll share my basic recipe, a pumpkin version, gingerbread version, and I also posted a delicious apple pie version.

Banana Egg Pancakes

INGREDIENTS:

2 eggs
1 banana
1 tsp vanilla extract
1/4 tsp cinnamon
pinch of sea salt (optional)
1 tbsp coconut oil
raisins (optional- these add a sweetness to the pancakes so you don’t need any additional toppings like syrup or honey)

METHOD:
This particular recipe is easiest to make using a stick blender, but mixer or even a fork and some elbow grease will work.

Put eggs, banana, vanilla, cinnamon and sea salt in container.  Blend until mixture is liquefied.

Heat skillet to medium/high heat (I prefer to use an electric skillet for even cooking).  Melt coconut oil in skillet.  Pour mixture onto pan, making 6 pancakes.

Allow pancakes to cook until golden on the underside.  Top with raisins, then flip.  Cook an additional minute or so, until the second side is cooked through.

Pumpkin Banana Pancakes

2 eggs
1 banana
1 tsp vanilla extract
1/4 cup pumpkin puree
1 tbsp maple syrup
pinch of cinnamon
pinch of nutmeg
pinch of ground cloves
pinch of ground ginger
pinch of sea salt (optional)
1 tbsp coconut oil
raisins or currants (optional)

Follow the same method as above.

Gingerbread Pancakes
2 eggs
1 banana
1 tsp vanilla extract
1 tbsp blackstrap molasses (up to 2 tbsp to taste)
pinch of cinnamon
pinch of nutmeg
pinch of ground cloves
pinch of ground ginger
pinch of sea salt (optional)
1 tbsp coconut oil
raisins or currants (optional)

Follow the same method as above.

Apple Pie Pancakes 

Additional optional toppings for all pancake varieties:

chopped nuts
dried cranberries
shredded coconut
mini chocolate chips
other diced fresh or dried fruit
