Quick & Easy Home-Made Chicken Stock (and shredded chicken)

I ran across a version of this recipe a few months ago and was thrilled to realize how quick and easy it can be to make a very flavorful chicken stock.  I know, there are many, many recipes out there, but if you want one that doesn’t take much prep and takes less than 2 hours to cook, this one is perfect!  Even better, you’re not cooking the chicken so much that it’s no longer tender.  This recipe yields flavorful, tender shredded chicken in addition to the stock.

This is the recipe I use to make my Chicken Curry Chowder.

Quick & Easy Home-Made Chicken Stock

INGREDIENTS:
1 whole organic chicken, giblets discarded
3 organic carrots, cut into thirds
3 organic celery stalks, cut into thirds
2 large organic onions, quartered
1 head of organic garlic, peeled
2 tsp organic thyme leaves (fresh or dried)
2 organic bay leaves
1 tbsp. organic whole peppercorns
1 tbsp. sea salt

Place chicken on top of the vegetables in a large stock pot.  Pour in enough water just to cover chicken.  Add the garlic, thyme, bay leaves, peppercorns and salt.  Bring to a boil, reduce heat and simmer, partially covered, for 1 1/2 hrs.

Remove chicken and place aside to cool before removing the meat.  Using a colander over a large bowl, drain the broth into the bowl.  Discard the vegetables, peppercorns and herbs that collected in the colander.

Transfer stock to a storage container, canning jars, or use immediately in your favorite recipe.

Once the chicken has cooled, harvest the meat and hand shred.  Store in a storage container or use immediately.  Discard skin and bones.
