Pumpkin Chocolate Chip Muffins (Paleo/Gluten Free) via PaleOMG

I came across these little gems around the holidays and they are every bit as delicious as they look!  I made very minor changes to the recipe, of course the original recipe is delicious too, but I prefer a little less sweet and they’re a bit oily when I double everything.  I always make mini-muffins out of these versus the big ones she makes.  They’re perfect for the kids and for a little sweet bite now and then.

Enough said.  Just make them.  You will LOVE them!

Pumpkin Chocolate Chip Muffins (Paleo) via PaleOMG

Ingredients
  • 2/3 cup pumpkin puree
  • 1/2 cup maple syrup
  • 1/3 cup coconut oil, melted
  • 6 eggs, whisked
  • 2 teaspoons vanilla extract
  • 1/2 cup coconut flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon powdered ginger
  • 1 teaspoon baking soda
  • 1 teaspoon aluminum-free baking powder
  • pinch of salt
  • 1 cup Enjoy Life Mini Chocolate Chips
Method:
  1. Preheat oven to 350 degrees.
  2. Mix together wet ingredients in a bowl: pumpkin puree, maple syrup, coconut oil, eggs, and vanilla extract.
  3. In another bowl, whisk together coconut flour, cinnamon, nutmeg, ground cloves, powdered ginger, baking soda, baking powder, and salt.
  4. Pour dry ingredients into wet ingredients and mix well.
  5. Fold in chocolate chips.
  6. Use cookie scoop to fill non-stick mini-muffin tins or use paper liners sprayed with olive oil, using your Misto sprayer.
  7. Bake for 12-14 minutes

Makes about 40 mini-muffins
