Almond Butter Banana Muffins (Paleo, Gluten-Free)

Oh, I was quite skeptical when I came across this recipe from Whole Lifestyle Nutrition, but let me tell you, these little muffins are AMAZING!  With only 3 main ingredients, no grains or refined sugar, they seem way too good to be true!  Trust me, they are delicious, and my kids devour them faster than regular banana muffins filled with flour, sugar and butter!  Not only do they cook up like a flour filled muffin, they have the same texture and taste too!  You’ll NEVER guess these are grain free!

I prefer them the next day or completely cooled.  I find that the banana flavor is enhanced once they are cooled.  These make a perfect on the go snack option!  I’ve had them before long runs and workouts too and they sit really well with me.

Almond Butter Banana Muffins

1 cup raw almond butter (salt and sugar free– other raw nut butters work too)
2 medium bananas, very ripe to over ripe
2 large eggs
1 teaspoon vanilla extract
1-2 tablespoons of raw honey or pure maple syrup (they really don’t need much, especially if you choose the maple syrup)
1 tsp aluminum-free baking powder (you can omit this for Paleo, it helps puff them up a little more than the baking soda & vinegar)
½ teaspoon baking soda
1 teaspoon apple cider vinegar

MIX IN: 1/3 c Enjoy Life mini chocolate chips (or raisins & cinnamon, or other mix ins of your choice)


Preheat oven to 400 degrees F.
Place all ingredients, except the chocolate chips, into a blender or food processor. (Or use a stick blender)
Blend until smooth.
Stir in the chocolate chips.
Pour batter into greased mini muffin tin(s), filling to the top.  (Makes 24 filled to the top.)
Bake for 10 minutes, until the tops are golden.

1 mini muffin= 100 calories, 8g carbs, 8g fat, 2g protein, 4g sugar  (using 2 tbsp honey*)

*If you eliminate the honey, you reduce the calories slightly, but the carbs go down to 6g and sugar goes down to 2g.  I use about 1 tbsp in mine.
